So I tried to make some bomb persimmon pancakes and those FAILED let me tell ya. I tried again with some form of oatmeal that would enjoy soaking up the moisture from a perfectly ripe persimmon and BAM- here we are.
Most mornings I’m rushing to lecture and I love having easy options on had that I made ahead. I only had a cup of oats to work with here so if you would like to prep for more cups just increase the spring size on the recipe button to get you to a full muffin pan rather than 4 filled cups!
I topped these guys with some creamy peanut butter and I’ll throw some Siggis plain yogurt in there for extra protein before I fly out the door.
