I love roasted veggies! There is something magical that happens in that oven to make anything thrown in there taste 10 times better when it comes out. Everyone has their own perfect roasting temp and seasoning mixture but I’m here to tell you roasting veggies is something you can’t really mess up.
If you are trying to incorporate more veggies into your life this is a wonderful way to do so. All you need are a variety of veggies, some heart healthy oil, and some herbs and salt and pepper!
My most favorite way to eat these are straight off of the pan dipped in hummus or avocado or nothing at all or on top of a huge bed of lettuce with a delicious dressing and some protein like beans or a lean organic meat.
Quick Recipe: Mashed avocado, lemon juice, sea salt, pepper! Perfect dipping sauce!
Here are my go-to veggies to roast:
Squash of any sort- I love butternut!
Sweet potatoes- orange/Japanese/ any potato in the oven is gold
Red onions: these caramelize to perfection
Carrots: roasting really brings out the natural sweetness.
Beets: a fun color change and if you cut them thin they become crispy
Brussel Sprouts: half them and cut off the hard stem and place face down- crispy outside and soft inside
The possibilities are really endless. Thats why I love roasting! You can change up the spice blend and completely wow your tastebuds too- veggies are only boring if you want them to be people.
