Its almost Thanksgiving and my tummy can feel it! I love the time surrounding the day just as much as I love the feast itself. I’m thankful for so much in life and the day makes my heart melt. It melts from memories of past holidays, it melts because theres always an awkward pause when we have to end the prayer and say “and we remember those who could not be here in person today but are here in spirit” aka my sweet Otta, it melts from being surrounded by people who love me and who I love and would do anything for, and it melts for those who don’t have the things I do.
Its a sweet time. I’m thankful for you guys who take a minute to read these posts and even send me sweet emails that make my smile SO big.
Alright con, enough emotions- lets eat!
I made a big batch of pumpkin pancakes that you can find under breakfast here and loaded them with Siggis yogurt, a little pure maple syrup, some Wedderspoon honey, Salba chia seeds, and Purely Elizabeth Granola + pom seeds to eat once I got to school.
After I got through my 8 am I headed to my classroom where I teach to get some work done and I ate some unpictured grapes- it was about a cup + like 3 whole wheat pita chips- weird I know I just felt munchie.
I got to watch my students present today and show me what they have learned after 13 weeks of me! They did amazing! They each chose a meal from a certain culture and gave me background and how they modified the meal to make it healthier in a practical way. My goal with my students and with anyone who I help in the future is to realize that good nutrition isn’t perfect- its just better. Simple swaps like whole grains for refined and the addition of a serving of vegetables into a dish can make your diet as a whole a lot better for you when you add up all those little swaps in the long run!
Lunch was a yummy kale caesar salad from Sweetgreen that was left over from a shoot I did the other day. I added some of the toppings from the shoot I did- its that black bean pile- and squeezed lime for dressing- YUM. After getting some Medical Nutrition and Advanced Nutrition done I went to lecture and snacked on a Nutzo packet with a honeyCRISP apple and some pumpkin pie Celestial tea with almond milk!
After lecture I drove to the gym and did an awesome HIIT workout and got sweaty- the best! I had a lot of shopping to do for the Thanksgiving dishes I’m making so I headed to Ralphs and Trader Joes and picked up a Siggis and a bite of a Perfect Bar to get me through until dinner because it had been 5 hours since I had last eaten at that point.
I came home and showered and ate this yummy din my dad made! Organic free range chicken roasted in some veggies plus lettuce, avo, toast with pasture raised butter, and sweet potatoes.
