Happy Hump Day! We made it half way through already- is it just me or is time flying like rapidly fast these days?!
Any who lets get into the eats.
Alarm goes off around 5:15 because I needed 15 more minutes to tidy up some messy spaces before our housekeeper comes but I hit snooze- typical- sorry Gloria. Finally got up around 5:40 am and went right to the coffee maker button and started gulping some water while getting my lunch together for the day.
I always have a cup and a half to 2 cups of coffee with unsweetened almond milk in the morning and I woke up ready to eat even though I wait till I get to school till I eat the main meal so I just pregamed with this 1/4 waffle left over from the weekend when I made this + some pure maple syrup and some almond butter.
I got my life together rapidly to exit the house to try and beat LA traffic which on this particular day was quite successful- I didn’t hate that drive! Once I pull into the parking lot I find my favorite spot, turn off the car but keep on NPR, and get right down to it.
After I had some solid car eats I headed to my 8 am lecture. After that I headed to the classroom that I teach in to sit down and get some work done before my students came in- it’s registration for spring classes at CSULA now and let me tell you- it is my LEAST favorite time ever- think disorganization to the MAXXXXXXX. Okay enough Connie. What I was getting to was that I then was snacking on 1/2 a bag of these chips + a bag of grapes and drinking some H20.
Post teaching on various eating styles I headed to the grad library where I could get some flash carding in for an exam on Thursday. Around 12 I went in on my sandwich with applegate roasted turkey, tomatoes, power greens from Trader Joes, some garlic hummus, and mustard with a brownie lara bar that was meh. The peanut butter chocolate chip and peanut butter flavor have my heart but they were out when I went shopping. I also had some snap peas!
After using my brain for another hour and a half I ate this apple with a mix of almond butter and vanilla Siggis yogurt mixed together to shmear on there.
Before I knew it it was time for the last lecture of the day- amen- and I filled up my Healthy Human aka the thing I never go a day without- with hot water, a tea packet and a shot of coffee that was in the grad library brewing and I already had some almond milk in there ready to go. I like to sip on something in class- it helps me feel more focused for some reason. I am LOVING the pumpkin spice flavor from here – so fall- so cozy.
After an hour and a half, then another hour and a half till I got home (had to hit up Target for some goods) I was hangry. I was also cold and wanted something warm and I had been thinking about the most delicious stew my mom made from Cooking Light last night + I had the bottom of a delish pumpkin chocolate chip muffin that I ate the top off already the day before. Anyone else a muffin topper?!

I flash carded yet again and I also made some decaf to cozy up with before taking the doggie on a 25 minute walk + abs. I got home and worked on another exam study guide for Friday and while that was happening I chopped up some veggies and threw them in the oven at 400 and let them do their thing while I do mine. About 25 minutes later I fried up 1 egg + 2 egg whites and threw a wholelotta veg and those eggs + some unpictured salsa verde.
Then I realized I had the whole house to myself (parents out at previous engagements) and I had a ripe banana… so… these. I made some vegan banana chocolate chip almond flour cookies just for gits and shiggles and they actually turned out quite tasty! I just need to work on the recipe a little more so they firm up a tad more. I love to throw stuff in a bowl and see if it works. So yeah anyways- had about 4 cooked ones and some batter and lots of water.
