Happy Thursday friends!
I said I would do a WIAW but then on Tuesday when I was photographing my eats I forgot some- whats new? I remembered on Wednesday and did a much better job! Lets get into it!
I had a steamy bowl of steel cut oats and some Love Grown Oats before a 75 minute yoga class. I topped it with Wild Friend PB, frozen fruit, chia seeds, and Purely Elizabeth Granola. I am really appreciating yoga. I started taking a class a week my junior year of college and it really makes a difference in my anxiety and my strength!
I stopped at Trader Joes for some dinner ingredients and came back with a Trilogy GT’s Kombutcha to sip on while I eat a little post workout meal of an organic egg with roasted sweet potatoes and brussels. I also had some plain Joe’s Os, Almond Butter, and apples too!
Said apples, AB, and Siggis too!
Here’s a sneak peek of what I made yesterday that will be up soon and that I ate 2 giant pieces of! Vegetarian lasagna! Also when I say giant please know I mean- GIANT. I went ham.
It was a little slice of heaven let me tell ya! I headed out after lasagna making to 2 appointments I had that day. I stopped for decaf at Philz Coffee in-between appointments and came home to do more work and eat more fruit and yogurt! I added some crunchy Frontier Bites on top for texture!
I headed out to Youth and Government for 3 hours and then while I was there shared these Energy Balls made from Food and Nutrition Magazines Test Kitchen! They have dates, almond flour, siggis, chia seeds, cashews, chocolate chips, coconut, and more goodies! Everyone loved them and I ate one myself.
Lastly, I got home around 9 pm and ate some spinach, and curried cauliflower rice with chickpeas! I showed everyone how to make this on my IG stories and it was just the thing I needed + some healthy hot cocoa before curling up in bed to wind down for the evening.
Thats it! I hope you guys enjoyed and are having a wonderful week!! I start school on the 23rd and I’m sorta kinda ready for a set routine again and to fill my brain with all the science. Until then I leave for Fresno all weekend with the YMCA and then head to Seattle on Tuesday! Woo!
