Hi Hello!! Today was one of those days where forgot to snap everything but I’ll write out what I missed. 8 am- got to sleep in because my Tuesday 8 am got moved to an online lecture- AMEN- 2 cups of coffee with all the frothy hemp milk. (9 am) I was in a rush in the morning and I couldn’t find the muffins I wanted from the freezer so into a mason jar went about 1/2- 3/4 cup oats from Love Grown Foods a mix of unsweetened and brown sugar + a blob of peanut butter + chia seeds + hot water + frozen blueberries + some pecan milk. I stirred it up and low key just drank it like a smoothie from the mason jar while sitting in traffic.

This blouse is fro my latest fix and its under 50 bucks- hi thank you. The bell selves are so flattering and it really fit well! I paired it with a pair of J Crew pixie pants and my rain boots to teach today.
11 am came these goodies while sitting down to do some TPN calculation practice in the library after teaching lecture. I have a handful of dry roasted almonds, a chunk of Honey Mama’s Dutch flavor that I’m obsessing over right now. I also had half of a Jahnny Bar from Day Dream Dessert Co.! These guys are vegan and organic- so yummy!
12:30 still TPNing / memorizing lab values I ate a giant salad topped with leftover pesto pasta from this easy recipe I posted on my instagram! I also had some Siete Nacho chips on the side (plus more when I got home around 4 pm with some avocado +coffee)
1:40 Maternal/Child Nutrition Lecture and a fire drill- ugh.
3 pm post Maternal Nutrition lecture I sipped on a Shine Organics while driving to run an errand then home where I made another cup of coffee and got to catch up via phone with my college roomie Jenna and walk the dog + do some yoga!
I was being lazy AF so this was dinner. Roasted veggies over arugula + some Kite Hill Cream cheese + a spoon of Siggis Triple Cream yogurt and a slice of pineapple +a little PB and banana for dessert.
Pretty much plant based today too! Next week I’ll try and show you that I do actually eat meat but when I’m in a rush these things are so easy to whip up!
8-10 pm I caught up on reading an assignments for several classes and hit the hay!
