Happy Celiac Awareness Month! As a dietetics student we learn about celiac and the uncomfortable side effects that are a consequence of the disease but I had never quite understood how hard life would be as a Celiac until meeting my good friend Kelly in grad school. Her maximum allowance for gluten is 1 part per million. So basically if it’s not 100% certified gluten free, she can’t have it. It’s hard for her to eat out and to just make decisions without having to look at a label or ask for ingredients. Sometimes we forgot how easy we have it with a somewhat normal GI system!
For those who don’t know, Celiac Disease is an allergic reaction to gluten, the protein in wheat, barley, and rye. Celiac is a full blown immune reaction which requires a life long adherence to a gluten free diet. For those who are not diagnosed with Celiac Disease or a diagnosed gluten sensitivity, there has been inadequate evidence to support that going gluten free has any health benefits (here , here, and here) . ANYWHO, This is a subject for another day because these are gluten free and delicious brownies I would love to share with you!
Bob’s Red Mill reached out to me to create a recipe for this month and I was all about it! I’m really not great with baking GF baking, but I found a basic brownie recipe here and I doctored it up. So, no this recipe is not 100% mine but it’s great! I hope you enjoy!
