Another fun weekend in the books and a few days closer to being FINISHED with this semester. Here are my favorite things I ate and did this weekend.
I had my last few hours at the CSULA food pantry and then took a few hours in the late morning to just chill by watching an episode of Modern Family and taking a “resting my eyes” nap. I then walked, showered, and headed to a friend’s apartment in Santa Monica to have a belated friends giving. I had planned on a big sweaty workout but it sounded so unappealing. Walking was perfect. We ate super well and I finally got to meet my friend’s baby(not pictured). She was pregnant the semester before last and it was so nice to be together again!
(Does being a decent cook come with being a nutrition grad student? Because all my friends rocked it.)
My plate was filled with a little of everything. We had hanger steak and GF lasagna (celiac friends) rather than turkey and just had a bunch of side dishes + an awesome dessert spread. I LOVED the pie. I had this slice and then like 2 more at 3:30 am after we went out. Except at 3 am I didn’t use a plate- straight out of the pie tin.
A few months back I wrote a post about trusting myself. This came after my doctor told me my anxiety meds were probably no longer needed and I was feeling a whole lot of emotions. The most prominent one was happiness and this weekend was filled with a lot of that too. I think your 20’s are filled with basically a long island iced tea of emotions and noticing and naming them is the best way to roll with them. I do realize this blog has sort have been just an online diary of life but I’m sort of okay with that. I think it’s cool to watch myself grow and I love other blogs that show the same. So bottom line is happiness and being 23 is a biggie right now and a total priority of mine.
Saturday I had to get up to be on campus by 8 am to check in with my hiking students and after that head to Sarah’s to switch cars and head down to the beach for 24 hours. By the time we got to the beach I was about ready to face plant onto the sand, which is what I did.
After a solid hour nap we headed out on the bikes to grab a bite. Tacos for me and some ice cream after that- it was only ok. I don’t get hung up on food so much anymore- if I bought it and I don’t like it there is no rule anywhere that says I have to eat it all so I don’t. We ended up saving the rest of our ice cream in the freezer to eat later anyways.
Spent the afternoon in the kitchen making dinner and some cookies from a fun collab with Paper Mart and Chef’d . I received a gingerbread men baking box and cute little box to give the cookies as a gift or to a cookie exchange. I had some technical difficulties with the dough however and could not for the life of me get it to work. I ended up cutting the little guys out after they baked and moved on with my life. See the end product here! The taste though? AMAZING. Very strong ginger and cinnamon notes and I love that. I think this is such a stinking cute idea! Recipes with everything delivered to you and a box to bring it in? Perfect.
For dinner I made us some soup that I adapted to make plant based from here. We loved this and it came together in 10 minutes and the I left it to simmer while we watched the sunset.
Took the evening to relax, turn the phone off, and catch up on some sleep before heading back up to LA for Sunday.
Sunday was spent studying for my 3 last final exams/presentations, getting a mani pedi, and going to mass and a walk with mom. No photos to report here except for some of my weekly favorites. I’ve been using this pancake mix and its changing lives (they have since changed the packaging but it’s the same idea).
Favorite dinner of the week was the Trader Joes baked cod. You can find this in the freezer section.
