Happy happy new year friends! I hope you had a great evening whether you slept through midnight or were out being a social butterfly. My intention for this year is to be a bit more present on constancelyeating in hopes to engage more with you! My hope is that I’ll be able to get up a post on Monday, Wednesday, and Friday. One weekend recap, one weekly eats or what I ate Wednesday post, and one post from the heart or a topic you guys ask about. I’m not the most eloquent writer but I hope I’ll get better the more I practice! Bring on the comments this year!
So since it’s Monday, lets recap the weekend/end of the week shall we?
Before the weekend, I met up with a friend who started at CSULA with me and then transferred to Oklahoma for her CDP (coordinated dietetic program). We got to catch up, talk thesis and life, and it was totally refreshing. She’s great and I’m so excited for us to come back in 2 years to grab whole milk lattes as RDs.
The end of the week was so special because my mom retired! Both my my parents are environmental attorneys and have had very successful careers. My dad is still working and moved from private law to working for the state of California- my mom just retired form Nestle. I can only hope that I will be as successful in the dietetics field. So in celebration, after a day at the beach with my sorority sisters and girlfriends visiting from Chi I met my family at Descanso Gardens, mom’s favorite place, had a wonderful meal at a pop-up restaurant Maple and went to the Enchanted lights exhibit.
The dinner consisted of the best Brussels sprouts we have ever had. No exaggeration here. I thiiiink they were flash friend and then roasted? Ugh the sauce and goat cheese on top were just amaze. We also split a bottle of Chardonnay from Spain and I shared the salmon with risotto and squash with mom.
Content was an understatement. This was the best meal in the last few months hands down!
I tried to get some photos of the exhibit but it didn’t do it justice so I’ll just describe it as beautiful and I would totally recommend for anyone in the LA area next year looking for a low key night with your significant other or family- bring the kiddies too!
Saturday I met my same friends for a hike and lunch at Lemonade. I got a turkey BLT with an arugula salad and was super happy. I’m not a huge lemonade person so I always get the unsweetened option which is just like lemon water, which I’m totally good with. If I’m drinking something sweet I would rather it be a milkshake if we’re being totally honest here.
The rest of the day I just relaxed, got a mani/pedi, and headed to Saturday night mass with mom and had a great dinner after of sausage, white beans, kale, and red peppers. We make our own sausage- it’s the best!
Sunday was a 2 mile walk with mom + some HIIT when I got home to just up the heart rate a little. I wrote this post, continued organizing the blog and my mess of an email inbox and headed out to Pasadena to be with friends for New Years. I have been waking up early to watch the Rose Parade with Sarah’s family for so many years- it doesn’t feel like a new year without it!

Post parade we came back for casseroles – one savory and one sweet. I had seconds too! Wishing you the happiest year- I think its going to be a great one 🙂 Currently running on 3 hours of sleep so I’ll be enjoying a nap while you read this.
