Happy Friday! This has been the last week of peace before school starts and I already feel stressed, ugh. I’m gearing up to leave for another weekend with over 3,500 teens in Fresno, California for the YMCA. I love these weekends so much but they suck every ounce of life from my body (and sometimes soul) while at the same time giving me a lot back. Is that possible? If you work for the Y or with kids in any capacity I’m sure you are like yup, yeah, I get that. Anywho, I ate some yum stuff this week- nothing too special but here are some goodies!
Let’s start with beverages:
I felt myself getting sick so every day I downed LOTS of water, some zinc, an airborne thing + lots of tea with lemon and honey (below) and I also had Philz coffee for sort of the first time. I didn’t order the right thing last time. The key is- you order cream on top- you just do. It’s amazing.
Breakfasts were a lot of pumpkin oats!
Single serving- ish- sometimes this is satisfying to me sometimes I need more- depends! = 1/4 c quick cooking steel cut oats, 1 cup almond milk, 1 big spoon pumpkin, a dash cinnamon and nutmeg, and some maple syrup and whatever you want to top it with! You just add all that in on the stove till it boils and then turn the heat on low simmer and cover for like 10 min- it gets super creamy!I also added chia seeds in here- 1 spoon!
TBH- they have been all over the freaking place. More like random snacks than lunches + a few PB and Js in there this week. We also went to lunch with Oma and I got a turkey sandwich because I didn’t have time to look at the menu since I was finding parking and it was just a meh sandwich. Will look harder next time.
(The boys I sit for were having pasta so babysitter eats pasta too to demonstrate good eating behaviors :))
We had Indian one night and it’s always my favorite of the week. Forgot to snap a photo because by the time I got home from the Y to eat it it was 9:15 pm and I was hangry. My mom made chicken in some veggies too!
My FAVORITE snack this week was this gooey vegan GF cookie. I’m not vegan or GF but I love this cookie (its the V GF chocolate chip). I met my friend to catch up and he loved it too!
So that’s about it. Once school rolls around I’ll have regular meal times and commitments so it will be a little more full on these recaps. I’ll fill you in on all the eats in Fresno this weekend. Hope you have a wonderful weekend!
